Pesto Grilled Cheese with Peppercorn Mayo Crust

Our basil plants have been growing like crazy this spring and I’ve been using fresh Pesto in more and more recipes. After I made this Pesto Grilled Cheese the other night for a quick dinner, I knew I had to share the recipe. It’s definitely one of my new favorites.

I combined thick layers of the licorice flavored pesto with the milder bite of Swiss and just a hint of Parmesan cheese, but what really set’s of the flavor of the sandwich is the tangy crust made with the peppercorn olive oil mayonnaise crust. I’ve always made my grilled cheese sandwiches with mayo, it gives the sandwich a nice dry crust, unlike butter that can leave the bread soggy. And the tangy flavor with the spicy peppercorns added a wonderful element to this exceptional and easy sandwich.

This weeks Treasury Roundup is dedicated to all of those who grow our food, the ranchers and farmers, cheese-makers, and bakers, and all amazing yummy sweet food that start’s to come out of the garden at the beginning of spring. Here comes spring, I wait for it every year with baited breath. The morning dew glistening on newly opened flower petals, while leaves start to form and buds begin to show. It’s the season of possibilities, when anything can happen. The buzzing bees have just begun the wonderful song, a droning that spells of food and magic. Come take a magic ride with me through the earliest days of spring, those moments where it can seem as though it’s a dream that may be snatched away at any moment, or able to be fulfilled in the most amazing way, in the heady aroma of a blooming flower and a truly warm day full of sunshine.

Etsy Find: Hanukkah Shopping

I comb through the Etsy Finds e-mails everyday, looking at there beautiful choices for the holidays, and themed gatherings. Hoping beyond hope that I will be included. But yesterday, I didn’t have time, I was simply to busy.

But late last night, I noticed that my traffic had just absolutely exploded, and I had no idea where it was coming from. I looked through google analytics, and saw a mysterious annotation, called bronto. Well what is bronto, and why is my traffic coming from google bronto. What in the world is that I asked myself.

Well after doing some digging I found out that bronto is the service that Etsy uses to send out there Etsy Finds e-mails.  But alas, I had deleted all of my emails for the day, and there is no archive for Etsy Finds. I continued my search looking through my email trash can. Until there it was, the Etsy Find, Tell your Friend Veronica… It’s Time to Celebrate Hanukkah! And it had in it under the gifts for men, my beautiful, Song of Solomon Dog Tag Necklace.  Woo Hoo!!!
